This section contains lots of ideas for making healthier versions of foods people love, such as pizza, cookies, cakes and ice cream. Eating healthy doesn't mean deprivation.

Kale Chips

One of the best things we can do for our health is to eat more dark, green leafy vegetables and kale is one of the best. It is a powerhouse of nutrition, loaded with vitamins K, A and C, as well as significant amounts of various B-vitamins. It’s a good source of manganese, copper, calcium, potassium, iron and magnesium, too. As well as being loaded with antioxidants, it's also a cruciferous vegetable, which means that it contains compounds like indole-3 carbinol that help the liver break down toxic chemicals; giving it cancer preventing properties.

But how do you get kids to eat vegetables like kale, let alone most adults?  Making kale chips is one way. This healthy snack can replace potato and corn chips and be just as flavorful.

Making Stock (or Bone Broth)

Bone broth or stock is made by simmering meat, bones and vegetables for many hours.  This process extracts minerals from the bones, amino acids like glutamine that are important for gut and brain health and gelatin, which helps with connective tissue.  Bone broth is very good to help heal a damaged intestinal tract in SIBO and Leaky Gut Syndrome. It is also good for building greater immunity and resistance to disease. Because it extracts nutrients from bones and joints, it also supports the health of teeth, bones, joints and connective tissues, which can help people with arthritis, osteoporosis, tooth decay and other structural problems.

Coconut Oil and Nut Butter Fudge

It's easier to improve your diet if you make healthier versions of your favorite treats. So, for all you fellow choco-holics out there, here's my recipe for a coconut oil and nut butter fudge. It's not low calorie, but it is very satisfying and doesn't have any refined sugars or unnatural ingredients.

Fantastic All Natural Cream Pies

I love Thanksgiving because I love to cook for people.  Since this was my wife Helen's first Thanksgiving, I asked her what kind of pies she wanted and she loves cream pies.  I've never made a cream pie from scratch before, but I love a challenge, so I converted some recipes I had into healthier ingredients.  I made a banana cream pie and a chocolate cream pie.  They both turned out fabulously well.  They were so good I can't wait to make them again.  So, I thought I'd share the recipes with you.  I hope you enjoy them, too.

Recently, I celebrated my 53rd birthday. It was the last day of my annual herb walk class and my sons and I made ice cream, chocolate brownies and chocolate cake for everyone who was participating. I promised the students at the class that I'd get them the recipes.
